I Saw God Today

My husband and I set off for a short 4-wheeler ride around the Big Woods today.
I decided to grab my camera...just in case there might be something worth taking a picture of.

You know...something like a random wildflower or the occasional pretty weed.

And then we came upon this...a random patch of wild flowers.  These flowers were growing in a part of our field that is usually kept clipped with a bushhog.

But...because of a recent storm and a tree that had fallen, my husband could not bushhog this spot because there were limbs in the way.

Isn't this beautiful...

I love the way sometimes, the camera allows you to see what the eyes may have missed.

And the closer you get, the more beautiful nature becomes.

Milk Chocolate Chip Pecan Pie

Today has been a pie making day.
I decided to make pie crusts with a new recipe I have been using from Paula Deen.  The recipe makes 3 pie crusts...so, the next thing you know...I had made 3 pies.

I want to share first the recipe for this milk chocolate chip pecan pie.  It was a hit with my entire family.  This was the first time I had ever made this pie, and I am sure I will make it again.

You will need:
1 cup sugar
1/2 cup self rising flour
2 eggs
1 stick margarine or butter, melted
1 cup milk chocolate chips
1 teaspoon vanilla
1 cup chopped pecans


Mix sugar and flour together.
Slightly beat eggs.


Add eggs, vanilla, and melted margarine.
Mix well.



Now add the milk chocolate chips...try not to eat any.


Add the pecans...try not to eat any.


Pour into unbaked pie shell. 
It already looks good.


Bake for 35 minutes at 350 degrees.

Teen Bedroom

My daughter's friend spotted this flower decoration at a Kirkland's.  She recognized that it would match my daughter's comforter...and match it did.
Just the perfect thing to bring this bedroom redo to a close.

Quiet Place

Look really closely at this picture, and you will see the secret to our serenity.
This has been the first full week we have been back in school.  It has been a great week.

At the end of a long day, it sure is nice to spend a little time sitting in this swing.
(Did you see the swing in the other picture?)
I don't know why we didn't think of hanging a swing from this tree sooner.

University Visit

It was a beautiful day two weeks ago when we visited Sewanee University.


It is time for my son to choose a college.


We are visiting a different campus every weekend.


Sewanee was not the college we set out to visit.  It was instead a stop we made on the way back from Chattanooga.


We had a great time walking around this beautiful campus. 


Both the University and the town are absolutely beautiful.


I can only imagine what it is like for the students who attend class here.

MidSouth Land Clearing

I made a few pictures yesterday of a farm my husband is clearing with his Fecon Bullhog Forestry Mulcher.  It still amazes me that this little machine can do such big jobs.  This farm is being cleared to become pasture land, so the owner is leaving a few scattered trees.  You can play the slide show below to see the pictures.

French Coconut Pie

I have been looking for a different pie crust recipe.
Today, I decided to try Paula Deen's Perfect Pie Crust.
It turned out good...I will use this recipe again.  We made 3 crusts from the recipe.
One of the crust, we used to make a French Coconut Pie.  This is a delicious and easy to make pie.
You will need:
1 1/2 cup sugar
3 eggs
1 tsp. vanilla
1/2 cup melted shortening
1 cup coconut

Preheat oven to 425 degrees.
Start by whisking the eggs.
Then, add the sugar, vanilla, and melted shortening and mix well.

Finally, add the coconut.  Use a spoon to stir in the coconut.

Pour the mixture into the prepared crust.

Bake at 425 degrees for 10 minutes.
Reduce the heat and continue to bake at 325 degrees for 40 minutes.

This is a delicious pie.
I think it is better when served warm.
