French Coconut Pie

I have been looking for a different pie crust recipe.
Today, I decided to try Paula Deen's Perfect Pie Crust.
It turned out good...I will use this recipe again.  We made 3 crusts from the recipe.
One of the crust, we used to make a French Coconut Pie.  This is a delicious and easy to make pie.
You will need:
1 1/2 cup sugar
3 eggs
1 tsp. vanilla
1/2 cup melted shortening
1 cup coconut

Preheat oven to 425 degrees.
Start by whisking the eggs.
Then, add the sugar, vanilla, and melted shortening and mix well.

Finally, add the coconut.  Use a spoon to stir in the coconut.

Pour the mixture into the prepared crust.

Bake at 425 degrees for 10 minutes.
Reduce the heat and continue to bake at 325 degrees for 40 minutes.

This is a delicious pie.
I think it is better when served warm.
